This simple yet flavorful recipe relies on accessible ingredients commonly found in Levantine kitchens. Even in places like Canada, fresh or frozen okra is often available in grocery stores.

3 Tips for Cooking Delicious Okra

  1. Cooking Okra in Batches: If preparing a large amount of okra (and this recipe does call for lots of it!), brown it in batches to avoid overcrowding the pan.
  2. Okra Cooking Time: The size of fresh okra affects cooking time. Larger, mature okra (commonly found in Canada) may require an extra 10–15 minutes of simmering, while smaller, tender okra cooks faster.
  3. Reducing Okra Sliminess: Browning okra before stewing reduces sliminess by removing excess moisture. Simmer until tender, checking smaller pieces first to prevent bursting and releasing seeds. While harmless, the seeds may affect texture if you’re sensitive to it. Remove smaller pieces as they cook, leaving larger ones to finish.

How to Make Vegetarian Okra Stew?

For a vegetarian version of Lebanese okra stew, simply omit the beef and increase the amount of okra.

Ingredients

  • 350 g (12 oz) outside round steak or boneless beef chuck with good marbling, cut against the grain into strips (Note 1)
  • 680 g (1.5 lb) fresh okra (Note 3)
  • 796 ml (28 oz) can of San Marzano tomatoes, D.O.P certified with basil (Note 2)
  • 400 ml (13.5 oz) can tomato sauce
  • 3⁄4 cup water
  • 2 cups onion, chopped (about 2 medium-sized onions)
  • 3 tbsp oil, divided
  • 1½ tbsp ground cumin
  • ½ tbsp salt
  • 2 tsp dried oregano
  • 2 tsp dried thyme

Instructions

1. Cook the Okra:

  • Heat 1 tbsp of oil in a large saucepan over medium-low to low heat.
  • Add the okra and cook for about 15 minutes, stirring constantly to ensure even browning.
  • If needed, cook the okra in two batches for even results. You can use the same saucepan or cook simultaneously in another pan for efficiency.

2. Prepare the Stew Base:

  • Heat another 1 tbsp of oil in a large pot over medium-low heat.
  • Add the chopped onions and beef strips. Bring heat to medium to medium-high. Cook until the onions are golden and the beef begins to brown slightly.

3. Simmer the Stew:

  • Add the canned San Marzano tomatoes (including their juices), tomato sauce, water, oregano, thyme, cumin, and salt to the pot with the beef and onions. Stir to combine.
  • Bring to a gentle simmer, then add the cooked okra to the pot.

4. Cook the Stew:

  • Cover the pot and simmer for 30 minutes, stirring occasionally.
  • Check the okra for tenderness at the 30-minute mark. If it’s still firm, continue simmering for an additional 15 minutes, or until the okra reaches your desired texture (Note 3).

5. Serve:

  • Once the okra is tender, remove the pot from heat. Serve the stew over a bed of steamed rice and enjoy!

Notes

  1. For the beef, choose cuts like boneless chuck or outside round steak, both known for their good marbling—those white veins of fat that run through the meat and enhance its flavor and tenderness. Be sure to visually inspect the meat to ensure it has the amount of marbling you prefer.
  2. If canned San Marzano tomatoes that are DOP certified are unavailable, substitute with canned Italian-style or San Marzano-style peeled tomatoes with basil.
  3. Cooking time may vary depending on the size and maturity of the okra. Smaller, younger okra cooks faster. If preparing a large amount of okra (and this recipe does call for lots of it!), brown it in batches to avoid overcrowding the pan.
