  • Canned solid light tuna in oil (soybean oil)

Ingredients

  • 3 cups of bowtie (farfalle) pasta (Note 1)
  • 2 ½ quarts (2 L) water
  • ¾ cup chopped onion
  • 2 tuna cans of 7 oz (198 g) solid light tuna in oil (soybean oil) (Note 2)
  • 2 cups of potatoes, chopped
  • ½ tbsp salt (more to taste if needed) 
  • Couple pinches of ground black peppercorn
  • Handful of fresh chopped cilantro

Instructions

  1. Bring a pot of water to a boil.
  2. Add the potatoes, pasta, and onion. Adjust heat to maintain a medium boil and cook for the amount of time specified for the pasta.
  3. Once the potatoes and pasta are cooked through, stir in the tuna and desired amount of oil (Note 3).
  4. Remove the pot from heat and stir in cilantro. Season with salt and pepper to taste.

Notes

  1. Any pasta works! Bowtie or farfalle pasta is traditionally used but any pasta works like fusilli or penne.
  2. For the best flavor, use solid light tuna in soybean oil—the oil enhances the broth’s rich, savory taste. I recommend using Unico brand tuna if available to you!
  3. Add the soybean oil from the tuna can gradually, tasting as you go. Adding too much at once can make the soup heavier than desired. I usually use the oil from one full tuna can when making .
